Ingredients
1 large yellow onion, sliced into rings
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1 cup buttermilk
2 large eggs
2 cups panko breadcrumbs
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Oil, for frying (canola or vegetable)
Instructions
1. Slice the onion into thick rings and carefully separate them.
2. In a bowl, whisk together buttermilk and eggs. Add onion rings and soak for 10-15 minutes.
3. Set up three bowls: one with flour, cornstarch, paprika, salt, pepper, and garlic powder; another with the buttermilk-egg mixture; and a third with panko breadcrumbs.
4. Dredge each soaked onion ring in the flour mixture, then dip into the egg mixture, and finally coat with panko breadcrumbs.
5. Heat oil in a deep pot to 350°F (175°C).
6. Fry onion rings in batches for 2-3 minutes until golden and crispy, turning as needed.
7. Remove and drain on a wire rack or paper towels.
