Ingredients

2 cups whole milk

3/4 cup granulated sugar

4 large egg yolks

2 tablespoons cornstarch

3 tablespoons unsalted butter

2 teaspoons vanilla extract

1/2 teaspoon ground nutmeg

Pinch salt

Extra granulated sugar, for optional brûlée topping


Instructions

1. In a medium saucepan, whisk together whole milk, granulated sugar, egg yolks, and cornstarch until smooth.

2. Place saucepan over medium heat and cook, whisking constantly, for 8–10 minutes until thickened (it should coat the back of a spoon). Do not let it boil.

3. Remove from heat and immediately whisk in unsalted butter, vanilla extract, ground nutmeg, and a pinch of salt until fully incorporated.

4. Strain the jam through a fine-mesh sieve into a clean bowl or jar to remove any lumps.

5. Let cool at room temperature for 10 minutes, then cover and refrigerate at least 4 hours to set.

6. For an optional brûlée finish: before serving, sprinkle a thin layer of granulated sugar on top and caramelize with a kitchen torch or broiler until golden and crisp.

Notes

For a thicker jam, increase cornstarch to 2 1/2 tablespoons.

Always strain for the silkiest texture—don’t skip this step.

Jam will firm up more as it chills; stir before serving for best consistency.
