These Homemade Meat Stuffed Potato Cakes are a crispy, savory comfort food that turns simple pantry staples into one of my favorite easy dinner ideas. Ingredients
2 pounds russet potatoes, peeled and cubed
1 large egg
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon paprika
2 tablespoons chopped fresh parsley
3 tablespoons oil, for frying
Instructions
1. Boil the peeled and cubed potatoes in salted water until fork-tender, then drain well and mash until smooth.
2. Let the mashed potatoes cool slightly, then mix in the egg, flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until a soft dough forms.
3. In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is tender.
4. Stir in the garlic, paprika, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper, then cook for 1 to 2 more minutes.
5. Remove the filling from the heat and let it cool slightly.
6. Scoop a portion of the potato mixture into your hand, flatten it into a round, and place a spoonful of meat filling in the center.
7. Fold the potato mixture around the filling, seal the edges, and gently flatten into a thick cake.
8. Repeat with the remaining potato mixture and filling.
9. Heat the oil in a skillet over medium heat and pan-fry the potato cakes in batches for 3 to 4 minutes per side, until golden brown and crisp.
10. Sprinkle with fresh parsley and serve warm.
Notes
Do not skip draining the potatoes really well, because extra moisture can make the cakes too soft and cause them to break when you fill or fry them.
