Ingredients

12 large egg whites

1 1/2 cups granulated sugar

1 cup cake flour

1 1/2 teaspoons cream of tartar

1/4 teaspoon salt

2 teaspoons vanilla extract

1 1/2 cups heavy whipping cream

1/4 cup powdered sugar

2 cups fresh raspberries (plus more for garnish)

1/2 cup raspberry jam or compote


Instructions

1. Preheat oven to 350°F (175°C).

2. Separate egg whites from yolks, making sure no yolk gets in the whites.

3. In a large clean bowl, beat egg whites, cream of tartar, and salt on medium speed until soft peaks form.

4. Gradually add 3/4 cup granulated sugar, a tablespoon at a time, beating until stiff, glossy peaks form.

5. Sift together cake flour and remaining 3/4 cup sugar.

6. Gently fold the flour mixture and vanilla extract into the whipped egg whites, being careful not to deflate the batter.

7. Spoon batter into an ungreased 10-inch tube pan, smoothing the top.

8. Bake 35–40 minutes or until cake is golden and springs back to the touch.

9. Invert pan and cool upside down completely.

10. Carefully remove the cooled cake from the pan. Slice horizontally into 2–3 layers.

11. Whip heavy cream and powdered sugar until soft peaks form.

12. Reserve some raspberries for topping, and gently fold the rest into the whipped cream with half of the raspberry jam or compote.

13. Spread raspberry cream between each cake layer and over the top and sides.

14. Garnish with remaining raspberries and drizzle the rest of the jam or compote on top.

15. Chill at least 1 hour before slicing and serving.

Notes

Use only a tube pan—do not grease it—to help the cake rise properly.

Let the cake cool completely upside-down to maintain its airy texture.

Fresh raspberries make the best garnish, but you can use other berries if preferred.
