Ingredients
8 medium tomatillos, husked and rinsed
2 jalapeño peppers, stemmed
1 small onion, chopped
2 cloves garlic, peeled
1/2 cup fresh cilantro leaves
1 lime, juiced
1 teaspoon salt
(optional) 1 serrano pepper, for extra heat
Instructions
1. Preheat the broiler and arrange tomatillos, jalapeños, and garlic cloves on a baking sheet.
2. Broil for 5-7 minutes, turning once, until tomatillos are charred and softened.
3. Transfer roasted tomatillos, jalapeños, and garlic to a blender or food processor.
4. Add chopped onion, fresh cilantro, lime juice, and salt.
5. Blend until you reach your desired consistency, either smooth or slightly chunky.
6. Taste and adjust seasoning, adding more lime or salt as needed, or an extra pepper for more heat.
7. Transfer salsa to a bowl and let cool to room temperature, or chill in the fridge for at least 1 hour.
8. Serve with chips, tacos, or your favorite dishes and enjoy!
Notes
For a mild salsa, remove the seeds and membranes from the peppers before roasting.
Letting the salsa sit in the fridge for at least an hour will help the flavors meld and intensify.
Salsa verde keeps well in the fridge for up to 1 week, and can be frozen for up to 2 months.
