Instructions
1. Preheat oven to 400°F and place 2 tablespoons vegetable oil in a 9-inch cast iron skillet. Put the skillet in the oven to heat.
2. In a large bowl, whisk together 1 cup yellow cornmeal, 1 cup all-purpose flour, 1/4 cup granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
3. In another bowl, whisk together 1 cup buttermilk, 2 large eggs, and 1/3 cup melted unsalted butter until smooth.
4. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
5. Carefully remove the hot skillet from the oven and pour the batter into the hot oil. Spread evenly.
6. Bake for 20 to 25 minutes until golden brown and a toothpick inserted in the center comes out clean.
