1 cup pumpkin puree
3 large eggs
1/2 cup granulated sugar free sweetener (like erythritol or monk fruit)
1 1/4 cups almond flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup melted butter or coconut oil (for dairy free)
1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
2. In a large bowl, whisk together the pumpkin puree, eggs, sugar free sweetener, melted butter (or coconut oil), and vanilla extract until smooth.
3. Add the almond flour, pumpkin pie spice, baking powder, and salt. Stir until just combined—do not overmix.
4. Pour the batter into the prepared baking dish and smooth the top with a spatula.
5. Bake for 25–30 minutes, or until the center is set and a toothpick comes out mostly clean (a few moist crumbs are fine).
6. Allow the bars to cool completely in the pan. Slice into 9 or 12 bars.
7. Serve plain or top with sugar free whipped cream and a sprinkle of cinnamon, if desired. Store in the fridge for up to 5 days, or freeze for up to 2 months.
