2 cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

¾ cup whole milk

2 cups fresh peaches, peeled and diced

2 tablespoons granulated sugar (for topping)

Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan and line with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, cream the softened butter with 1 cup sugar until fluffy. Beat in eggs, one at a time, then stir in vanilla extract.

4. Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the flour mixture. Mix until just combined.

5. Gently fold in the diced peaches.

6. Spread the batter evenly in the prepared pan. Sprinkle 2 tablespoons sugar over the top.

7. Bake for 38–42 minutes, until golden and a toothpick inserted in the center comes out with moist crumbs.

Notes

For best flavor, use ripe, fresh peaches, but canned (drained) or frozen (thawed and drained) peaches work well too.
