Description
This lemon cream chia pudding is bright, creamy, and refreshing with the perfect balance of sweet and tangy flavor. It is an easy recipe for a quick breakfast, healthy snack, light dessert, and one of my favorite breakfast ideas when I want simple food ideas that still feel special.
Ingredients
3 tablespoons chia seeds
1 cup milk
1/2 cup Greek yogurt
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 tablespoons maple syrup or honey
1/2 teaspoon vanilla extract
1 pinch salt
Instructions
1. In a medium bowl or jar, whisk together the milk, Greek yogurt, lemon juice, lemon zest, maple syrup or honey, vanilla extract, and salt until smooth.
2. Stir in the chia seeds very well so they are evenly distributed.
3. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
4. Cover and refrigerate for at least 4 hours or overnight until thick and creamy.
5. Stir before serving and add a splash of milk if you want a looser texture.
6. Spoon into jars or bowls and top with extra lemon zest, lemon slices, berries, or granola if desired.
Notes
Do not skip the second stir after the chia seeds are added, because that is the easiest way to avoid clumps and get a smooth pudding.
