Ingredients
4 large russet potatoes
1 tablespoon olive oil
1 teaspoon salt
2 tablespoons butter
1/2 cup sour cream
4 ounces cream cheese, softened
1 cup shredded cheddar cheese, divided
1/2 cup shredded mozzarella cheese
1/2 pound shrimp, peeled, deveined, and chopped
1/2 pound lump crab meat
2 cloves garlic, minced
2 teaspoons Cajun seasoning
1/2 teaspoon paprika
1/4 teaspoon black pepper
3 green onions, sliced
Instructions
1. Preheat the oven to 400°F. Scrub the potatoes, dry them well, rub them with olive oil, and season the outsides with salt. Bake for 50 to 60 minutes, or until tender.
2. Let the potatoes cool slightly, then cut them in half lengthwise. Scoop out most of the inside into a bowl, leaving enough potato in the skins to hold their shape.
3. Mash the potato flesh with butter, sour cream, cream cheese, 1/2 cup cheddar cheese, black pepper, and half of the green onions until creamy.
4. In a skillet over medium heat, cook the shrimp with garlic, Cajun seasoning, and paprika for 2 to 3 minutes, until just cooked through. Gently fold in the crab meat and heat for 1 minute.
5. Spoon the mashed potato mixture back into the potato skins. Top each with the seafood mixture.
6. Sprinkle the tops with the remaining cheddar cheese and the mozzarella cheese.
7. Return the stuffed potatoes to the oven for 10 to 15 minutes, until the cheese is melted and bubbly.
8. Finish with the remaining green onions and serve hot.
Notes
Do not overcook the shrimp before the final bake, or the seafood can turn rubbery instead of tender.
