Description

This Loaded Tater Tot Breakfast Bowl is a quick breakfast packed with crispy tater tots, fluffy eggs, melted cheese, and smoky bacon for one of my favorite easy breakfast ideas. It is an easy recipe that also works for brunch, breakfast for dinner, and cozy food ideas when I want something hearty, cheesy, and satisfying without much fuss.


Ingredients

1 pound frozen tater tots

8 large eggs

2 tablespoons milk

8 slices bacon

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

3 green onions, sliced

1/2 cup diced red bell pepper

1 tablespoon butter

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped parsley


Instructions

1. Bake the tater tots according to the package directions until golden brown and crispy.

2. While the tater tots bake, cook the bacon in a skillet over medium heat until crisp, then transfer to paper towels and crumble.

3. In a bowl, whisk together the eggs, milk, salt, and black pepper.

4. Melt the butter in a nonstick skillet over medium-low heat.

5. Pour in the egg mixture and cook gently, stirring often, until the eggs are softly scrambled.

6. Divide the crispy tater tots among 6 bowls.

7. Spoon the scrambled eggs over the tater tots.

8. Top each bowl with cheddar cheese, mozzarella cheese, and crumbled bacon.

9. Finish with sliced green onions, diced red bell pepper, and chopped parsley.

10. Serve immediately while warm and melty.

Notes

Do not overcook the eggs, because they will keep cooking a little after you remove them from the heat, and that is the best way to keep them soft and creamy.
