Ingredients
4 large russet potatoes
4 tablespoons butter
4 ounces cream cheese
1 cup sour cream
1/2 cup milk
2 cups shredded cheddar cheese
8 slices bacon, cooked and crumbled
3 green onions, sliced
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Bake the russet potatoes at 400°F until fork tender, about 50 to 60 minutes.
2. Let the potatoes cool slightly, then peel or scoop out the centers into a large bowl.
3. Add the butter, cream cheese, sour cream, milk, garlic powder, salt, and black pepper. Mash until smooth and creamy.
4. Stir in 1 1/2 cups of the cheddar cheese, most of the bacon, and most of the green onions.
5. Spread the potato mixture into a greased 9×9-inch baking dish.
6. Top with the remaining 1/2 cup cheddar cheese, the rest of the bacon, and the rest of the green onions.
7. Bake at 375°F for 20 to 25 minutes, until hot and bubbly.
8. Let it rest for 5 minutes before serving.
