Ingredients

4 large eggs

3 ounces feta cheese, crumbled

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 tablespoon olive oil

1 garlic clove, minced

1/2 teaspoon dried oregano or mixed Mediterranean herbs

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat oven to 375°F (190°C).

2. Wash the cherry tomatoes and spinach. Slice tomatoes in half, mince the garlic, and crumble the feta cheese.

3. In an oven-safe skillet or small baking dish, heat olive oil over medium heat. Sauté garlic for 30 seconds until fragrant.

4. Add spinach to the skillet and cook until wilted.

5. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.

6. Sprinkle the crumbled feta evenly over the vegetables.

7. Use a spoon to create four small wells in the mixture. Crack the eggs into each well.

8. Sprinkle the eggs with dried oregano, salt, and pepper.

9. Transfer the skillet or baking dish to the oven. Bake for 10-12 minutes until egg whites are set and yolks are still slightly runny. For firmer yolks, bake 2-3 minutes longer.

For best results, use block feta in brine for a creamier, richer texture.
