Description

This Mexican Chopped Cheese Sandwich is a quick dinner packed with seasoned ground beef, melted cheese, and fresh pico-style topping, all tucked into a toasted hoagie roll. It is an easy recipe for busy nights, a satisfying dinner idea for families, and one of my favorite comfort food ideas when I want something cheesy, bold, and full of flavor.


Ingredients

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons taco seasoning

1 tablespoon tomato paste

2 tablespoons water

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

4 hoagie rolls

2 tablespoons butter

2 medium tomatoes, diced

1/4 cup red onion, finely chopped

1/3 cup cilantro, chopped

1 jalapeño, finely chopped

1 tablespoon lime juice

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. In a small bowl, stir together the diced tomatoes, red onion, cilantro, jalapeño, lime juice, salt, and black pepper. Set aside.

2. Heat a large skillet over medium-high heat and add the ground beef and chopped onion.

3. Cook the beef until browned, breaking and chopping it into small pieces as it cooks.

4. Stir in the garlic and cook for 30 seconds.

5. Add the taco seasoning, tomato paste, and water, then stir until the meat is evenly coated and juicy.

6. Reduce the heat to low and mix in the Monterey Jack and cheddar until melted.

7. Split the hoagie rolls and spread the insides with butter.

8. Toast the rolls in a skillet or under the broiler until lightly golden.

9. Spoon the cheesy beef mixture into each roll.

10. Top with the fresh tomato mixture and serve immediately.

Notes

Do not add the fresh tomato topping too early or the bread can turn soggy before serving.
