Ingredients

2½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, very cold and cubed

1 cup cold buttermilk


Instructions

1. Preheat oven to 425°F and line a baking sheet with parchment paper.

2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

3. Add the cold cubed butter and cut it into the flour mixture until coarse crumbs form with pea-sized butter pieces visible.

4. Pour in the cold buttermilk and gently stir just until the dough comes together. Do not overmix.

5. Turn the dough onto a lightly floured surface and pat into a 1-inch thick rectangle. Fold the dough in half, rotate, and repeat this folding process 3 times total.

6. Pat the dough to 1-inch thickness and cut straight down with a round cutter without twisting. You should get 8 biscuits.

7. Place biscuits close together on the baking sheet and bake for 12 to 15 minutes until golden brown.

Notes

For the tallest biscuits, make sure your butter and buttermilk are very cold and avoid twisting the cutter, as this seals the edges and prevents proper rising.
