Ingredients
1 1/2 cups oat cookie crumbs
4 tablespoons unsalted butter, melted
3 tablespoons light brown sugar
3/4 cup granulated sugar
1/2 cup light brown sugar
1/4 cup milk powder
1 tablespoon cornstarch
1/4 teaspoon salt
1/2 cup unsalted butter, melted
6 egg yolks
1/2 cup heavy cream
1 teaspoon vanilla extract
2 tablespoons powdered sugar
Instructions
1. Preheat the oven to 350°F and lightly grease a 9-inch pie dish.
2. In a bowl, mix the oat cookie crumbs, 4 tablespoons melted butter, and 3 tablespoons brown sugar until the texture looks like wet sand.
3. Press the crust mixture firmly into the bottom and up the sides of the pie dish, then set it aside.
4. In a large bowl, whisk together the granulated sugar, 1/2 cup brown sugar, milk powder, cornstarch, and salt.
5. Add the 1/2 cup melted butter, egg yolks, heavy cream, and vanilla extract, then whisk until the filling is smooth.
6. Pour the filling into the prepared crust and gently tap the pie dish on the counter to release air bubbles.
7. Bake for 30 to 35 minutes, until the edges are set and the center still has a slight jiggle.
8. Let the pie cool completely at room temperature.
9. Refrigerate for at least 4 hours, or overnight, until fully chilled and set.
10. Dust the top with powdered sugar before slicing and serving.
Notes
