Description

Bright, citrusy, and irresistibly fluffy, these Mini Baby Lemon Impossible Pies are the sunshine your dessert table has been waiting for. With a texture that’s a cross between custard and cake, each bite delivers a light tangy punch balanced by a tender crumb and a dusting of powdered sugar. These mini pies are the perfect one-bite indulgence, making them ideal for brunches, tea parties, or simply keeping in your fridge as a quick snack. They come together effortlessly with pantry staples and just a few steps, yet they look elegant enough for any special occasion.

Ingredients

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 teaspoons lemon zest

1/4 cup freshly squeezed lemon juice

4 large eggs

1/2 cup all-purpose flour

1 1/4 cups milk

1 teaspoon vanilla extract

1/4 teaspoon salt

Powdered sugar, for dusting

Instructions

1. Preheat your oven to 350°F (175°C). Lightly grease a standard muffin tin or line with silicone liners.

2. In a large bowl, whisk together the melted butter, sugar, lemon zest, and lemon juice. Add eggs one at a time, whisking well after each.

3. Sift in the flour and salt. Mix until just combined.

4. Gradually whisk in the milk and vanilla until the mixture is smooth. The batter will be thin—that’s normal.

5. Divide the batter evenly into 12 muffin wells. Bake for 23-25 minutes, or until the tops are golden and centers are just set.

6. Let the pies cool in the pan for 10 minutes before transferring to a wire rack. Once fully cooled, dust with powdered sugar.

Notes

Always use freshly squeezed lemon juice for the best flavor.

Let them cool completely before dusting with sugar to avoid melting.

Store in fridge for up to 5 days or freeze for up to 2 months.
