Description
These Mini Biscoff Cheesecake Bites are a creamy, crunchy, easy dessert that feels bakery-worthy without being complicated. They are perfect for a party dessert, holiday tray, sweet snack, easy recipe for entertaining, and one of my favorite food ideas when I want bite-sized cheesecake with rich cookie butter flavor.
Ingredients
18 Biscoff cookies, crushed
4 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1/2 cup granulated sugar
1/4 cup sour cream
1 teaspoon vanilla extract
1 large egg
1/2 cup Biscoff spread
1/2 cup heavy whipping cream
2 tablespoons powdered sugar
2 Biscoff cookies, crushed for topping
Instructions
1. Preheat the oven to 325°F and line 8 cups of a muffin pan with paper liners.
2. Mix the 18 crushed Biscoff cookies with melted butter until the crumbs look evenly moistened.
3. Divide the crust mixture between the muffin cups and press it down firmly.
4. Beat the cream cheese and granulated sugar until smooth and creamy.
5. Mix in the sour cream and vanilla extract until combined.
6. Add the egg and stir just until the filling is smooth.
7. Spoon the cheesecake filling evenly over the crusts.
8. Bake for 16 to 18 minutes, until the centers are just set with a slight jiggle.
9. Cool completely, then chill for at least 3 hours.
10. Warm the Biscoff spread slightly and spoon it over the top of each chilled cheesecake bite.
11. Whip the heavy cream with powdered sugar until soft peaks form.
12. Pipe or spoon the whipped cream on top, then finish with the extra crushed Biscoff cookies.
Notes
Make sure the cream cheese is fully softened before mixing so the filling stays smooth and does not turn lumpy.
