Ingredients

2 1/2 cups chocolate sandwich cookies, crushed (about 28 cookies)

6 tablespoons unsalted butter, melted (for crust)

8 ounces bittersweet chocolate (60–70% cocoa), chopped

2 tablespoons unsalted butter (for mousse)

2 teaspoons powdered gelatin (optional, for stability)

3 tablespoons cold water (for gelatin)

4 large pasteurized eggs, separated

1/2 cup granulated sugar

1 teaspoon peppermint extract (divided, 1/2 for mousse, 1/2 for whipped cream)

1 teaspoon vanilla extract

1 3/4 cups heavy cream (for mousse)

1 cup heavy cream (for whipped topping)

2 tablespoons powdered sugar (for whipped topping)

12 drops green food coloring (optional, for color)

Chocolate shavings, for garnish

Fresh mint leaves, for garnish


Instructions

1. Crush chocolate sandwich cookies into fine crumbs. Combine with melted butter and press into the bottom of a 9-inch springform pan. Chill.

2. Melt chopped bittersweet chocolate with butter until smooth. Let cool slightly.

3. (Optional) Sprinkle powdered gelatin over cold water and let bloom 5 minutes. Microwave until dissolved, about 10 seconds.

4. Beat egg yolks with granulated sugar until thick and pale. Stir in 1/2 teaspoon peppermint extract and vanilla extract. Add melted chocolate mixture and dissolved gelatin (if using). Mix well.

5. Whip egg whites to stiff peaks. In a separate bowl, whip 1 3/4 cups heavy cream to soft peaks.

6. Fold whipped egg whites into the chocolate mixture, then gently fold in whipped cream until smooth.

7. Pour mousse over the chilled crust. Smooth the top and refrigerate for at least 6 hours or overnight.

8. For the topping, whip 1 cup heavy cream with powdered sugar, 1/2 teaspoon peppermint extract, and food coloring to stiff peaks.

9. Pipe or spread mint whipped cream on top of the set mousse. Garnish with chocolate shavings and fresh mint.

10. Slice with a warm knife and serve chilled.

Notes

For best results, use high-quality bittersweet chocolate and pure peppermint extract.

Chill the cake thoroughly before slicing for neat layers.

If making ahead, add whipped cream topping just before serving.
