Ingredients
1 cup pumpkin purée
3/4 cup plain Greek yogurt (full-fat or 2%)
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
3/4 cup brown sugar (packed)
1/2 cup granulated sugar
2 cups all-purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
2. In a large bowl, whisk together pumpkin purée, Greek yogurt, vegetable oil, eggs, vanilla, brown sugar, and granulated sugar until smooth.
3. In a separate bowl, sift together flour, pumpkin pie spice, baking powder, baking soda, and salt.
4. Gently fold dry ingredients into wet ingredients until just combined. Do not overmix.
5. Pour batter into prepared pan and smooth the top.
6. Bake for 24–28 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
7. Cool completely in the pan. For cleanest cuts, chill in fridge 30 minutes, then slice into 16 bars.
