Ingredients

2 cups all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon baking powder

1 1/2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

1 cup packed brown sugar

1/2 cup vegetable oil

2 large eggs

2 cups unsweetened applesauce

1 teaspoon vanilla extract

1 cup chopped walnuts or pecans (optional)

For the Brown Sugar Glaze:

1/2 cup packed brown sugar

2 tablespoons butter

2 tablespoons milk

1/2 cup powdered sugar

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or two loaf pans.

2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.

3. In another bowl, beat brown sugar, oil, and eggs until smooth. Stir in applesauce and vanilla.

4. Add dry ingredients to wet ingredients, stirring just until combined. Do not overmix.

5. Fold in chopped nuts if using.

6. Pour batter into prepared pan, smoothing the top.

7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

8. Cool cake in the pan.

9. For the glaze: In a saucepan, heat brown sugar, butter, and milk until bubbling. Remove from heat and whisk in powdered sugar and salt until smooth.

10. Drizzle glaze over cooled cake. Sprinkle with extra nuts if desired. Slice and serve!

Notes

For extra apple flavor, add 1/2 cup diced apples to the batter.

If using sweetened applesauce, reduce the brown sugar slightly.

Cake stays moist for several days—store tightly covered at room temperature or refrigerate.
