Ingredients
1 cup pumpkin purée
2/3 cup vegetable oil
1/2 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
7/8 cup white chocolate chips (reserve 2 tablespoons for topping)
Instructions
1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with non-stick spray.
2. In a large bowl, whisk together pumpkin purée, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
3. In another bowl, sift together flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
4. Gently fold the dry ingredients into the wet ingredients just until combined. Do not overmix.
5. Reserve 2 tablespoons white chocolate chips for topping. Fold remaining white chocolate chips into the batter.
6. Divide batter evenly among the 12 muffin cups (about 3/4 full each). Sprinkle reserved white chocolate chips on top.
7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
