900g (2 lbs) boneless, skinless chicken thighs
1 tablespoon olive oil
1 large onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 teaspoons ground cumin
2 teaspoons ground paprika
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1 teaspoon ground turmeric
1 teaspoon salt (plus more to taste)
½ teaspoon black pepper
400g (14 oz) canned diced tomatoes
750ml (3 cups) chicken broth
2 large carrots, peeled and sliced
1 can (425g/15 oz) chickpeas, drained and rinsed
1 tablespoon lemon juice
Fresh cilantro or parsley, chopped, for garnish
Instructions
1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken thighs with salt and pepper, then brown them on both sides. Remove chicken and set aside.
2. Add diced onion, garlic, and grated ginger to the same pot. Sauté until softened and fragrant, about 3-4 minutes.
3. Stir in cumin, paprika, coriander, cinnamon, and turmeric. Toast spices for about 1 minute until fragrant.
