Description

These No-Bake Cinnamon Roll Truffles are the kind of sweet bite that makes any dessert table feel extra special. They have a creamy cinnamon-spiced center, a smooth chocolate coating, and a pretty white chocolate drizzle that gives them that bakery-style finish. This is an easy recipe I love for holiday treats, dessert platters, quick party sweets, and fun food ideas when I want something rich without turning on the oven. They are perfect when I need a quick dessert, an easy no-bake treat, or simple dessert ideas that still look impressive. With warm cinnamon roll flavor, a soft truffle filling, and a candy-like shell, these are wonderful for snack boards, special occasions, and make-ahead sweets.

Ingredients

36 vanilla sandwich cookies, crushed

8 oz cream cheese, softened

3 tbsp brown sugar

2 tsp ground cinnamon

1 tsp vanilla extract

1 pinch salt

12 oz milk chocolate or semi-sweet chocolate, melted

4 oz white chocolate, melted

Instructions

1. Crush the vanilla sandwich cookies into very fine crumbs using a food processor or by placing them in a sealed bag and crushing them with a rolling pin.

2. Add the softened cream cheese, brown sugar, ground cinnamon, vanilla extract, and salt to the cookie crumbs, then mix until the mixture becomes smooth and holds together like soft dough.

3. Scoop the mixture into small portions and roll into 18 even balls.

4. Place the truffle balls on a parchment-lined tray and chill in the refrigerator for 30 minutes or in the freezer for 15 minutes until firm.

5. Melt the milk chocolate or semi-sweet chocolate until smooth, then dip each chilled truffle into the chocolate and let the excess drip off.

6. Return the coated truffles to the lined tray and let the chocolate begin to set.

7. Drizzle the melted white chocolate over the tops of the truffles.

8. Let the truffles set completely before serving or storing.

Notes

Do not skip the chilling step before dipping, because soft truffle centers can fall apart in the melted chocolate and make the coating messy.
