Ingredients
1 pound ground beef (80/20)
2 medium yellow onions, thinly sliced
1 teaspoon salt
1/2 teaspoon black pepper
4 slices American cheese
4 soft burger buns
2 tablespoons unsalted butter, for buns
Optional: sliced pickles, ketchup, mustard, lettuce
Instructions
1. Slice onions paper-thin using a mandoline or sharp knife.
2. Divide ground beef into 4 equal balls (4 ounces each).
3. Heat a cast-iron skillet or griddle over medium-high heat.
4. Place beef balls onto skillet and immediately top with a generous handful of onions. Smash with a sturdy spatula until patties are about 1/2-inch thick. Sprinkle with salt and black pepper.
5. Cook (onion-side down) for 2-3 minutes without moving, until onions are deeply golden and edges are crisp.
6. Flip patties so onions are on top. Top each patty with 1 slice American cheese.
7. Add a splash of water to the pan and cover for 30 seconds to melt cheese.
8. Meanwhile, butter the cut sides of buns and toast in a separate skillet or under broiler until golden.
9. Place each patty on a toasted bun, add toppings as desired, and serve hot.
Notes
Slice onions as thinly as possible for the best caramelization.
Don’t press the burgers after flipping or you’ll lose juiciness.
For sliders, make 6 smaller patties instead of 4 regular ones.
