2 celery stalks, diced

3 cloves garlic, minced

1 medium zucchini, diced

1 can (14.5 ounces) diced tomatoes

1 can (15 ounces) tomato sauce

4 cups vegetable broth

1 can (15 ounces) red kidney beans, drained and rinsed

1 can (15 ounces) Great Northern beans, drained and rinsed

1 cup chopped green beans

1 cup small pasta (ditalini)

1 tablespoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 cups fresh spinach, chopped

1/4 cup grated Parmesan cheese


Instructions

1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 to 6 minutes until softened.

2. Stir in minced garlic and cook for 30 seconds until fragrant.

3. Add diced tomatoes, tomato sauce, vegetable broth, Italian seasoning, salt, and black pepper. Stir well.

4. Add zucchini, kidney beans, Great Northern beans, and green beans. Bring to a gentle boil, then reduce to a simmer. Cover and cook for 15 minutes.

5. Stir in the small pasta and simmer uncovered for 8 to 10 minutes, until pasta is tender.

6. Add chopped spinach and cook for 2 to 3 minutes until wilted.
