Ingredients

1 cup fresh orange juice

1 tablespoon orange zest

3/4 cup granulated sugar

3 large eggs

6 tablespoons unsalted butter

1/8 teaspoon salt


Instructions

1. Zest the oranges first, then juice them until you have 1 cup of fresh orange juice.

2. In a medium saucepan, whisk together the orange juice, orange zest, sugar, eggs, and salt until fully combined.

3. Place the saucepan over low heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 8 to 10 minutes.

4. Remove the pan from the heat and add the butter one tablespoon at a time, stirring until completely melted and smooth.

5. Strain the orange curd through a fine-mesh sieve into a clean bowl or jar for the smoothest texture.

6. Let it cool, then cover and refrigerate until fully chilled and set.

Notes

Do not cook the curd over medium or high heat, because the eggs can scramble quickly and leave the texture grainy instead of silky.
