Ingredients

300g fresh spinach

200g paneer, cubed

1 large onion, finely chopped

2 medium tomatoes, chopped

3 garlic cloves, minced

1-inch ginger, minced

1 green chili, optional, chopped

1/2 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1 teaspoon garam masala

1/2 teaspoon chili powder

1/4 cup heavy cream or plain yogurt

2 tablespoons oil or ghee

Salt, to taste

Water, as needed

Fresh cilantro and sliced onion for garnish


Instructions

1. Blanch spinach in boiling water for 1-2 minutes, then transfer to ice water. Drain and blend into a smooth puree.

2. Heat oil or ghee in a large pan. Add cumin seeds and let them sizzle.

3. Add chopped onion, garlic, ginger, and green chili. Sauté until golden brown and fragrant.

4. Stir in tomatoes, turmeric, chili powder, and garam masala. Cook until tomatoes soften and the mixture thickens.

5. Pour in the spinach puree and mix well. Simmer for 3-4 minutes.

6. Add salt to taste and a splash of water if needed for consistency.

7. Gently add the paneer cubes, mixing to coat with the sauce. Simmer for 3-5 minutes.

8. Stir in cream or yogurt for a silky finish. Adjust seasoning if necessary.

9. Garnish with fresh cilantro and sliced onions. Serve hot with rice or naan.

For best color and flavor, avoid overcooking the spinach puree.
