Ingredients
2 ripe but firm pears, sliced
2 cups fresh or frozen cranberries
1/3 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
2 tablespoons cornstarch
3/4 cup old-fashioned oats
1/2 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon salt
6 tablespoons unsalted butter, melted
Instructions
1. Preheat the oven to 350°F and lightly grease an 8-inch baking dish.
2. In a large bowl, toss the sliced pears, cranberries, granulated sugar, lemon juice, vanilla extract, 1/2 teaspoon cinnamon, and cornstarch until evenly coated.
3. Spread the fruit mixture into the prepared baking dish.
4. In another bowl, mix the oats, flour, brown sugar, remaining 1/2 teaspoon cinnamon, and salt.
5. Pour in the melted butter and stir until the mixture forms crumbly clusters.
6. Sprinkle the topping evenly over the fruit.
7. Bake for 40 to 45 minutes, until the filling is bubbling and the topping is golden brown.
8. Let it cool for 10 to 15 minutes before serving.
Notes
Do not skip the resting time after baking, because serving it too soon can make the filling look thinner than it should.
