Ingredients

1 cup gluten-free yellow cornmeal

1/2 cup gluten-free all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons sugar

1/2 cup sweet onion, finely minced

3/4 cup buttermilk

1 large egg

2 tablespoons butter, melted

Neutral oil (for frying, about 3 cups)


Instructions

1. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar. Stir in the finely minced sweet onion.

2. In a separate bowl, whisk together buttermilk, egg, and melted butter.

3. Pour the wet ingredients into the dry mixture and gently mix until just combined. Do not overmix.

4. Let the batter rest for 5 minutes.

5. Meanwhile, heat 2 to 3 inches of neutral oil in a deep saucepan or Dutch oven to 350°F (175°C).

6. Using a small cookie scoop or two spoons, carefully drop heaping tablespoons of batter into the hot oil.

7. Fry in batches, turning occasionally, for 2-3 minutes per side, until golden brown.

8. Transfer hushpuppies to a paper towel-lined plate to drain and cool slightly before serving.

Notes

Make sure your cornmeal and flour are certified gluten-free if needed.

Let the batter rest for a few minutes to allow for maximum puffiness when frying.
