Description

Pickled Potatoes are a bright, tangy, easy recipe that turns tender baby potatoes into a bold and flavorful side dish. Ingredients

2 pounds baby Yukon Gold potatoes

1/2 cup white vinegar

1/4 cup olive oil

1/2 small red onion, thinly sliced

2 cloves garlic, minced

2 tablespoons fresh dill, chopped

1 teaspoon sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes


Instructions

1. Wash the baby potatoes and place them in a large pot of salted water.

2. Bring the potatoes to a boil and cook for 12 to 15 minutes, or until fork tender.

3. Drain the potatoes and let them cool for a few minutes until they are easy to handle.

4. In a large bowl, whisk together the white vinegar, olive oil, sliced red onion, minced garlic, fresh dill, sugar, salt, black pepper, and red pepper flakes.

5. Cut any larger potatoes in half, then add the warm potatoes to the bowl.

6. Toss gently until all the potatoes are well coated in the pickling mixture.

7. Transfer the potatoes to a serving bowl or storage container and refrigerate for at least 2 hours.

8. Stir before serving and top with extra dill if desired.

Notes

Do not overboil the potatoes or they may split and fall apart once you toss them with the dressing.
