Ingredients
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
2 large eggs
1/2 cup unsalted butter, melted and cooled
1 teaspoon vanilla extract
1 cup crushed pineapple with juice (canned or fresh)
4–5 pineapple rings for topping (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper if desired.
2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
3. In a separate bowl, beat the eggs, then mix in melted butter, vanilla extract, and crushed pineapple with juice.
4. Add the wet ingredients to the dry ingredients, folding gently until just combined. Do not overmix.
5. Pour the batter into the prepared loaf pan. If desired, arrange pineapple rings on top.
6. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
7. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
8. Optional: Drizzle with a glaze made of 1/2 cup powdered sugar mixed with 1–2 tablespoons pineapple juice.
