Ingredients
100g frozen pitaya (dragon fruit)
1 medium frozen banana
75g frozen mango
60ml plant-based milk (almond, coconut, or oat)
1/2 fresh banana, sliced (for topping)
1/2 kiwi, sliced (for topping)
40g raspberries (for topping)
40g mango, cubed (for topping)
1 tablespoon chia seeds
2 tablespoons coconut flakes
1 tablespoon pumpkin seeds
Instructions
1. Add the frozen pitaya, frozen banana, frozen mango, and plant-based milk to a high-speed blender.
2. Blend until thick and creamy, scraping down the sides as needed. Use just enough milk for a thick texture.
3. Spoon the smoothie base into a bowl and smooth the top.
4. Arrange banana slices, kiwi, raspberries, mango, chia seeds, coconut flakes, and pumpkin seeds on top.
5. Serve immediately and enjoy while cold.
Notes
Use the least amount of milk possible for a thick, spoonable smoothie bowl.
For the best presentation, use a variety of colorful toppings and arrange them neatly on top.
You can freeze fresh pitaya flesh ahead of time if you can’t find frozen packs at your store.
