Ingredients
1 pound ground chicken
3 cups cooked white rice
1 cup shredded carrots
1/2 cucumber, thinly sliced
1/2 cup green onions, sliced
4 large lettuce leaves
1 tablespoon sesame seeds
1 red chili, thinly sliced (optional)
1/4 cup sriracha
3 tablespoons brown sugar
2 tablespoons soy sauce
1 tablespoon rice vinegar
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon cornstarch
2 tablespoons water
Salt and pepper, to taste
Instructions
1. Slice the cucumber, shred the carrots (if needed), and chop the green onions.
2. In a small bowl, whisk together sriracha, brown sugar, soy sauce, rice vinegar, garlic, ginger, cornstarch, and water to make the firecracker sauce. Set aside.
3. Heat a large nonstick skillet over medium-high. Add ground chicken and break up with a spatula. Season with salt and pepper. Cook until browned and cooked through, about 5–6 minutes.
4. Pour the prepared firecracker sauce over the cooked chicken. Stir constantly for 2–3 minutes, until the sauce thickens and the chicken is evenly coated.
5. Divide cooked rice among 4 bowls. Arrange lettuce leaves around the edges.
6. Top each bowl with firecracker chicken, shredded carrots, cucumber, and green onions. Sprinkle with sesame seeds and sliced red chili, if using.
7. Serve immediately. Mix before eating for best flavor and texture.

For gluten-free bowls, use tamari or gluten-free soy sauce.
