Ingredients

2 pounds Yukon Gold potatoes

4 tablespoons salted butter

1/2 cup whole milk, warmed

1 cup smoked Gouda cheese, shredded

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped chives or parsley (optional, for garnish)


Instructions

1. Peel and cut 2 pounds Yukon Gold potatoes into 1-inch chunks. Place in a large pot, cover with cold water, and add a pinch of salt.

2. Bring the pot to a boil over high heat, then reduce to a simmer. Cook for 15–18 minutes, or until potatoes are fork-tender.

3. Drain the potatoes and return to the hot pot. Let them sit for 1 minute to allow excess moisture to steam off.

4. Mash the potatoes until mostly smooth using a potato masher.

5. Add 4 tablespoons salted butter and 1/2 cup warmed whole milk to the potatoes. Mash again until creamy.

6. Stir in 1 cup shredded smoked Gouda cheese until completely melted and blended.

7. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Taste and adjust seasoning if needed.

8. Serve hot, garnished with chopped chives or parsley and extra butter if desired.

Notes

For extra richness, swap half the milk for heavy cream.

Always use freshly shredded Gouda for the best melt and flavor.

To reheat leftovers, add a splash of milk and stir over low heat until creamy.
