Ingredients

2 cups vegetable broth

1 cup whole milk

1 cup yellow cornmeal (polenta)

2 tablespoons butter

1/3 cup grated Parmesan cheese

1/2 teaspoon salt

Pinch black pepper

2 tablespoons olive oil

1 tablespoon butter (for mushrooms)

3 cups sliced mushrooms (cremini, baby bella, or mixed)

3 garlic cloves, minced

Salt and black pepper to taste

2 tablespoons chopped fresh parsley


Instructions

1. In a medium saucepan, bring 2 cups of vegetable broth and 1 cup of whole milk to a gentle boil.

2. Gradually whisk in 1 cup of yellow cornmeal, stirring constantly to avoid lumps.

3. Reduce heat to low and continue stirring for 10–12 minutes until thickened.

4. Stir in 2 tablespoons of butter and 1/3 cup of Parmesan cheese.

5. Season with 1/2 teaspoon of salt and a pinch of black pepper. Keep warm.

6. In a large skillet, heat 2 tablespoons olive oil and 1 tablespoon butter over medium-high heat.

7. Add 3 cups of sliced mushrooms and cook undisturbed for 4 minutes.

8. Stir and cook an additional 4–5 minutes until browned.

9. Add 3 minced garlic cloves and sauté for 1 minute until fragrant.

10. Season mushrooms with salt and pepper to taste, then remove from heat.

11. Spoon polenta into bowls and top with garlic sautéed mushrooms.

12. Sprinkle fresh chopped parsley over the top and serve immediately.

Whisk the polenta slowly into hot liquid to prevent clumping.
