Ingredients

1 cup unsalted butter, softened

1 cup brown sugar

2 large eggs

2 1/4 cups all-purpose flour

2 tablespoons unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 1/4 cups white chocolate chips


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Add the eggs one at a time, then mix in the vanilla extract and red food coloring until fully combined.

4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.

5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Fold in 1 cup of the white chocolate chips, saving the rest for topping.

7. Scoop the dough into even balls and place them on the prepared baking sheets, leaving space between each one.

8. Press the remaining white chocolate chips onto the tops of the dough balls.

9. Bake for 10 to 12 minutes, until the edges are set and the centers still look slightly soft.

10. Let the cookies cool on the pan for 5 minutes before transferring them to a wire rack.

Notes

Do not overbake the cookies, because pulling them from the oven while the centers still look slightly soft is what keeps them thick, chewy, and tender after cooling.
