1 ¼ cups buttermilk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1 teaspoon red gel food coloring

4 oz cream cheese, softened

½ cup powdered sugar

2 to 3 tablespoons milk

1 teaspoon vanilla extract


Instructions

1. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

2. In a separate bowl, mix the buttermilk, egg, melted butter, vanilla, and red gel food coloring.

3. Pour the wet mixture into the dry ingredients and stir gently until just combined. Let rest for 5 minutes.

4. Heat a nonstick skillet or griddle over medium heat and lightly grease.

5. Pour ¼ cup batter per pancake and cook for 2–3 minutes until bubbles form. Flip and cook another 1–2 minutes.

6. Repeat with remaining batter (makes about 8 pancakes).

7. For the glaze, beat cream cheese and powdered sugar until smooth. Add milk and vanilla, then mix until drizzly.

8. Serve pancakes warm, stacked with glaze poured on top.

Notes

Let the batter rest for 5 minutes before cooking for fluffier pancakes.

Use gel food coloring for a deeper red color without thinning the batter.
