Ingredients
28 oz whole peeled tomatoes, canned
10 oz diced tomatoes with green chiles
1/2 cup onion
2 cloves garlic
1 jalapeño
1/4 cup cilantro
1 tablespoon lime juice
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon sugar
Instructions
1. Add the whole peeled tomatoes, diced tomatoes with green chiles, onion, garlic, jalapeño, cilantro, lime juice, salt, cumin, and sugar to a blender or food processor.
2. Pulse the mixture a few times until the salsa is mostly smooth but still has a little texture.
3. Taste and adjust with more salt, lime juice, or jalapeño if needed.
4. Transfer the salsa to a bowl or airtight container.
5. Chill for 30 minutes before serving for the best flavor.
6. Serve cold with tortilla chips, tacos, burrito bowls, or grilled meats.
Notes
Do not over-blend the salsa, or it can turn foamy and watery instead of keeping that classic restaurant-style texture.
