Ingredients

1 pound pork sausage

8 ounces cream cheese, softened

10 ounces Rotel tomatoes with green chilies, well drained

2 cups shredded cheddar cheese

1 1/2 cups baking mix (such as Bisquick)

fresh parsley, for garnish (optional)


Instructions

1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.

2. In a large bowl, combine 1 pound pork sausage, 8 ounces softened cream cheese, and 10 ounces well-drained Rotel tomatoes with green chilies. Mix thoroughly.

3. Add 2 cups shredded cheddar cheese and 1 1/2 cups baking mix. Mix until evenly combined and you have a cohesive dough.

4. Roll mixture into 1 1/2-inch balls (about 28–32 total) and arrange 1 inch apart on the prepared baking sheet.

5. Bake for 22–25 minutes or until golden brown, bubbling, and cooked through.

6. Sprinkle with chopped parsley while warm if desired. Serve hot, warm, or at room temperature.

Notes

For the best texture, drain the Rotel tomatoes thoroughly so the mixture isn’t too wet.

Use spicy, mild, or turkey sausage to suit your taste.

Unbaked sausage balls can be frozen and baked directly from frozen—just add a few minutes to the baking time.
