Ingredients

1.5 pounds chicken breasts, cut into 1.5-inch pieces

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons butter

4 cloves garlic, minced

1 teaspoon Italian seasoning

2 tablespoons all-purpose flour

1 cup low-sodium chicken broth

1 cup heavy cream

1/2 cup freshly grated parmesan cheese

1/3 cup sun-dried tomatoes, chopped

2 cups baby spinach

16 ounces potato gnocchi

Fresh basil, for garnish (optional)


Instructions

1. Season chicken pieces with salt and pepper.

2. Heat olive oil in a large skillet over medium-high. Sear chicken on all sides until golden and cooked through, about 2–3 minutes per side. Transfer to a plate.

3. Lower heat to medium. Add butter to skillet; once melted, add garlic and Italian seasoning. Sauté 1 minute until fragrant.

4. Stir in flour and cook for 1 minute to remove the raw taste.

5. Gradually whisk in chicken broth, then heavy cream. Simmer 2–3 minutes until slightly thickened.

6. Stir in parmesan cheese and sun-dried tomatoes until combined.

7. Add chicken (with juices), gnocchi, and spinach. Stir gently. Cover and cook 5–6 minutes, until gnocchi is tender and spinach is wilted.

8. Taste and adjust salt or pepper. Garnish with fresh basil and extra parmesan before serving.

Notes

For the creamiest sauce, use freshly grated parmesan and full-fat heavy cream.

Don’t overcook the gnocchi; it should be tender but not mushy.
