Ingredients

2 slices bread (sourdough or whole grain recommended)

1 tablespoon olive oil

1/4 cup chopped onion

1/2 cup chopped bell pepper (red or yellow)

1 clove garlic, minced

1/2 cup canned diced tomatoes (drained)

1 tablespoon tomato paste

1/2 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/4 teaspoon chili flakes (optional, to taste)

1/4 teaspoon salt

1/8 teaspoon black pepper

2 large eggs

2 tablespoons crumbled feta cheese

2 tablespoons chopped fresh parsley or cilantro


Instructions

1. Preheat oven to 375°F (190°C).

2. Heat olive oil in a skillet over medium heat. Add onion and bell pepper, sauté 3-4 minutes until softened.

3. Stir in garlic, cook 1 minute more until fragrant.

4. Add diced tomatoes, tomato paste, smoked paprika, cumin, chili flakes, salt, and pepper. Simmer 6-8 minutes until thickened.

5. Toast the bread slices until golden and sturdy.

6. Spoon shakshouka sauce onto each toast, creating a small well in the center.

7. Crack an egg into each well.

8. Place toasts on a baking sheet and bake 7-10 minutes until egg whites are set but yolks are still runny.

9. Remove from oven, sprinkle with feta and fresh herbs.

10. Serve hot and enjoy immediately!

Notes

For extra flavor, add a pinch of ground coriander or cayenne to the sauce.

Swap feta for goat cheese or a dairy-free alternative if desired.

The shakshouka sauce can be made 2 days ahead—just assemble and bake when ready to eat.
