Ingredients
2 boneless skinless chicken breasts
3 cups Brussels sprouts halved
3 cups butternut squash peeled and cubed
2 tablespoons olive oil
3 tablespoons Dijon mustard
2 tablespoons honey
3 cloves garlic minced
1 tablespoon lemon juice
1 teaspoon fresh thyme
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F and line a large sheet pan with parchment paper.
2. In a small bowl, whisk together the olive oil, Dijon mustard, honey, garlic, lemon juice, thyme, salt, and black pepper.
3. Place the chicken breasts on one side of the sheet pan and spread the Brussels sprouts and butternut squash on the other side in a single layer.
4. Brush the honey Dijon mixture over the chicken and drizzle the rest over the vegetables, tossing the vegetables lightly to coat.
5. Roast for 25 to 30 minutes, or until the chicken reaches 165°F and the vegetables are tender and caramelized around the edges.
