These Sheet Pan Tex-Mex Quesadillas are the kind of easy dinner I love making when I need something crispy, cheesy, and packed with flavor without spending the whole evening at the stove. They are a quick breakfast-for-dinner idea, an easy recipe for busy weeknights, and one of my favorite food ideas when I need simple dinner ideas that can feed a crowd. With seasoned beef, black beans, melty cheese, and golden tortillas baked on one pan, this is one of those satisfying meals that works for lunch, dinner, party platters, and make-ahead meal prep.
Ingredients
1 pound ground beef
1 tablespoon olive oil
1 small yellow onion, diced
1 bell pepper, diced
1 can black beans, drained and rinsed
2 tablespoons taco seasoning
1 tablespoon tomato paste
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
8 large flour tortillas
2 tablespoons melted butter
2 green onions, sliced
1/2 cup sour cream
1/2 cup salsa
Instructions
1. Preheat the oven to 425°F and lightly grease a sheet pan or line it with parchment paper.
2. Heat the olive oil in a skillet over medium heat, then cook the ground beef, onion, and bell pepper until the beef is browned and the vegetables are soft.
3. Stir in the black beans, taco seasoning, and tomato paste, then cook for 2 to 3 more minutes until the filling is thick and flavorful.
4. Arrange the flour tortillas around the sheet pan with enough overlap to cover the bottom and let the edges hang over the sides, then add extra tortillas in the center if needed.
5. Spread the beef mixture evenly over the tortillas, then top with the cheddar and Monterey Jack cheese.
6. Fold the overhanging tortillas over the filling, adding another tortilla on top if needed to fully cover the center.
7. Brush the top with melted butter and bake for 15 to 18 minutes until crisp and golden brown.
8. Let the quesadillas rest for 5 minutes, then slice and serve with green onions, sour cream, and salsa.
Notes
Do not spread the filling on the tortillas while it is too wet, or the quesadillas can turn soggy instead of crisp.
