Ingredients
8 oz cream cheese softened
1 cup sour cream
1/3 cup mayonnaise
1 tbsp fresh lemon juice
1 tsp Worcestershire sauce
1/2 tsp hot sauce optional
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp Old Bay seasoning or other seafood seasoning
1/4 tsp smoked paprika plus more for garnish
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
1 lb cooked shrimp peeled deveined tails removed and chopped
3 green onions thinly sliced divided
2 tbsp chopped fresh chives
24 toasted baguette slices
4 cups assorted fresh vegetable sticks such as celery carrots cucumber and bell pepper
Instructions
1. Chop the cooked shrimp into small bite-sized pieces. Set aside 1/2 cup of the chopped shrimp for garnish and keep the rest for mixing into the dip. If the shrimp seem wet, pat them dry with paper towels so they do not water down the dip.
2. In a medium mixing bowl, beat the softened cream cheese with a hand mixer or sturdy spatula until smooth and fluffy with no lumps remaining.
3. Add the sour cream, mayonnaise, fresh lemon juice, Worcestershire sauce, and hot sauce to the cream cheese. Mix until the mixture is completely smooth and creamy.
4. Sprinkle in the garlic powder, onion powder, Old Bay seasoning, smoked paprika, kosher salt, and black pepper. Stir until the seasonings are evenly distributed throughout the creamy base.
5. Fold in 2 of the sliced green onions, reserving the remaining green onion for garnish. Stir gently so the onions stay in small pieces instead of turning mushy.
6. Add the chopped shrimp, except for the reserved 1/2 cup, to the bowl. Gently fold the shrimp into the creamy mixture until every piece of shrimp is coated and evenly spread through the dip. Taste and add a pinch more salt, pepper, or hot sauce if desired.
7. Cover the bowl tightly and refrigerate the shrimp dip for at least 1 hour, or up to 24 hours. Chilling allows the flavors to meld and the dip to thicken slightly.
8. When ready to serve, transfer the chilled dip to a serving bowl. Top with the reserved 1/2 cup chopped shrimp, the remaining sliced green onion, and the chopped fresh chives. Dust lightly with extra smoked paprika if you like.
9. Arrange the toasted baguette slices and assorted fresh vegetable sticks around the bowl and serve the shrimp dip well chilled as an appetizer.
Notes
For the best texture, make sure the shrimp are well drained and patted dry before chopping; excess moisture can make the dip loose and dull the flavor.
