Ingredients

2 cups cooked chicken, shredded or cubed

2 cups mixed vegetables (frozen or fresh peas, carrots, corn, green beans)

1 medium onion, diced

2 cloves garlic, minced

4 tablespoons butter

4 tablespoons all-purpose flour

1 ½ cups chicken broth

1 cup milk or cream

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried thyme (or 1 tablespoon fresh)

½ cup chopped parsley (plus more for garnish)

1 can (16 oz) refrigerated biscuit dough (or 8 homemade biscuits)

Instructions

1. Preheat oven to 400°F (200°C).

2. In a large skillet, melt butter over medium heat. Add onion and garlic, sauté until soft and fragrant, about 3-4 minutes.

3. Sprinkle flour over the onion mixture, stirring constantly for 1 minute to form a roux.

4. Gradually whisk in chicken broth and milk, stirring until thickened and smooth, about 3-5 minutes.

5. Stir in cooked chicken, mixed vegetables, salt, pepper, and thyme. Simmer for 2-3 minutes until everything is heated through.

6. Remove from heat and fold in chopped parsley.

7. Pour the creamy filling into a greased 9×13-inch baking dish.

8. Arrange biscuits evenly over the filling.

9. Bake for 20-25 minutes, or until biscuits are golden brown and filling is bubbling.

10. Let cool slightly, garnish with extra parsley, and serve hot.

Notes

For a richer filling, use heavy cream instead of milk.

Feel free to swap in leftover turkey or add extra veggies like mushrooms or bell peppers.

If using homemade biscuits, watch the baking time and check for doneness by inserting a toothpick into the center.
