Ingredients
2 medium apples, peeled, cored, and diced (about 1 1/2 cups)
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon lemon juice
1 tablespoon water
1 teaspoon cornstarch
1 package pie dough (or 2 homemade pie dough rounds)
2 to 2 1/2 cups vegetable oil, for frying
Powdered sugar, for dusting (optional)
Instructions
1. Peel, core, and finely dice the apples.
2. In a skillet over medium heat, combine apples, sugar, cinnamon, nutmeg, lemon juice, and water. Cook for 4-6 minutes, stirring often, until apples are tender but not mushy.
3. Stir in cornstarch and cook for another minute until thickened. Remove from heat and let cool.
4. On a floured surface, roll out the pie dough to 1/8-inch thickness. Cut into 8 rounds, about 4-5 inches wide.
5. Spoon 2 tablespoons of apple filling onto the center of each dough circle. Fold in half and press edges to seal. Crimp edges with a fork.
6. Heat vegetable oil in a deep skillet to 350°F (175°C). Carefully fry 2-3 pies at a time for 2-3 minutes per side until golden brown.
7. Drain pies on paper towels. Dust with powdered sugar if desired and serve warm.
