Ingredients
3 pounds beef chuck roast
1 cup beef broth
3 chipotle peppers in adobo
4 cloves garlic
1 small onion
1/4 cup fresh lime juice
2 tablespoons apple cider vinegar
1 tablespoon ground cumin
2 teaspoons dried oregano
1/4 teaspoon ground cloves
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 bay leaves
Instructions
1. Cut the beef chuck roast into large chunks and season it with salt and black pepper.
2. Add the beef broth, chipotle peppers in adobo, garlic, onion, lime juice, apple cider vinegar, cumin, oregano, and cloves to a blender and blend until smooth.
3. Place the seasoned beef in the slow cooker and pour the blended sauce over the top.
4. Add the bay leaves and cover the slow cooker.
5. Cook on low for 8 to 9 hours or on high for 4 to 5 hours until the beef is very tender.
6. Remove the beef, shred it with two forks, and return it to the sauce.
7. Stir well, let the meat soak in the juices for a few minutes, then serve warm.
Notes
Do not use a lean cut of beef, or the barbacoa can turn out dry instead of tender and juicy.
