This Slow Cooker Chicken Tortilla Soup is the kind of easy dinner I love making when I want something warm, hearty, and full of bold flavor without a lot of work. Ingredients
2 boneless skinless chicken breasts
1 small onion, diced
3 cloves garlic, minced
1 can diced tomatoes, 14.5 ounces
1 can tomato sauce, 8 ounces
1 can black beans, 15 ounces, drained and rinsed
1 cup corn
1 red bell pepper, diced
4 cups chicken broth
1 packet taco seasoning
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons lime juice
1/4 cup fresh cilantro, chopped
1 cup tortilla strips
Instructions
1. Add the chicken breasts to the slow cooker.
2. Add the onion, garlic, diced tomatoes, tomato sauce, black beans, corn, and red bell pepper.
3. Pour in the chicken broth and season with taco seasoning, cumin, salt, and black pepper.
4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
5. Remove the cooked chicken and shred it with two forks.
6. Return the shredded chicken to the slow cooker and stir in the lime juice and cilantro.
7. Ladle into bowls and top with tortilla strips before serving.
Notes
Do not add the tortilla strips too early or they will lose their crunch, so always sprinkle them on right before serving for the best texture.
