Ingredients

3 1/2 to 4 pounds lamb shoulder

2 tablespoons olive oil

2 tablespoons fresh rosemary, finely chopped

5 cloves garlic, minced

1 1/2 teaspoons kosher salt

1 teaspoon black pepper

1 large onion, sliced

1 cup beef broth

1 tablespoon lemon juice


Instructions

1. Pat the lamb shoulder dry with paper towels and let it sit at room temperature for about 20 minutes.

2. Preheat the oven to 325°F.

3. In a small bowl, mix the olive oil, chopped rosemary, minced garlic, salt, black pepper, and lemon juice.

4. Rub the rosemary mixture all over the lamb shoulder, coating it well on all sides.

5. Spread the sliced onion in the bottom of a roasting pan or Dutch oven.

6. Pour the beef broth around the onions, then place the lamb shoulder on top.

7. Cover the pan tightly with a lid or foil and roast for 3 1/2 to 4 hours, or until the lamb is very tender.

8. Uncover the lamb and roast for 20 to 30 minutes more, until the top is browned and slightly caramelized.

9. Let the lamb rest for 15 minutes before slicing or pulling apart.

10. Spoon the pan juices over the lamb and serve warm.

Notes

Avoid roasting the lamb uncovered the whole time, because covering it during the long cook is what keeps it tender and juicy instead of dry.
